One of my absolute favorite dishes before going GF was the Chicken Fettuccine Alfredo at Olive Garden. Since then I have enjoyed the Alfredo sauce from Trader Joe's over brown rice pasta, but it still hasn't been as exciting as I would like it to be. So tonight I decided to create my own gluten-free Alfredo that would be just as delicious as Olive Garden's. I experimented with some different ingredients, and this is what I came up with:
It turned out FABULOUS! (My non-GF friend LOVED it so much, he ate two plates full!!)
This recipe is very easy to make...here's how:
Ingredients:
*4-5 small chicken breasts (I like the freeze-dried breasts from Trader Joe's, as well as Foster Farms)
*8-10 oz Trader Joe's Brown Rice Pasta or Trader Joe's Rice Sticks (Traditional Thai Style Pasta) I tried both and thought they were both equally delish!!
Sauce:
1/2 cup butter
8 oz GF Cream Cheese
2 tsp. Garlic Powder
1 tsp. Onion Powder
2 cups Milk
6 oz Grated Parmesan Cheese
A pinch of Black Pepper
1 tsp. Basil
Directions:
*Cook pasta as directed.
*Fry Chicken with Olive Oil, Onion Powder, Salt & Pepper to taste.
Melt Butter in saucepan
Add cream cheese + garlic powder, stirring with a wire whisk until smooth.
Add the milk, little by little, constantly stirring.
Stir in parmesan + black pepper.
Top pasta and chicken with Alfredo Sauce, sprinkle with basil, and ENJOY!
(I also served this with a spinach and cucumber salad. :)

Sounds sooooo good, Thank you for all these good ideas, they make thinking about dinnerso much easier. Since I have to eat GF my hubby and Mom have to also. They would like this as much as I!!
