Why Paleo? I've been reading a ton of research done by Dr. Peter Osborne, and listening to testimonials of some of his patients at Glutenology.net. If you are wondering why in the world anyone would try to eliminate even more grains - watch this video so you have a better understanding.
According to Dr. Osborne, about one-fourth of Celiacs may be intolerant to more grains than just wheat, oats, barley and rye. Certain proteins in corn and even rice are similar to gluten- and your immune system may react the same. Those who are extra-sensitive may go Gluten-Free, but once they are eating a lot of corn and rice products, realize that they are still dealing with a lot of symptoms. That's because these additional proteins in the corn and rice are perpetuating their illness and causing additional intestinal permeability.
If you feel like you have not been completely "healed" on a traditional GLUTEN-FREE diet, try this two month challenge with me....and let's see how we feel! I played around with the idea of going Paleo for a bit last year - and felt great - but didn't stick with it. This time around I'm determined to put in the effort and give it an honest try. I'm planning on looking and feeling my best by my 32nd birthday this April!! And if today was any indication of that - I'm off to a great start! I had so much more energy today than usual.
I'm feelin' pretty good & motivated to make this lifestyle change!
A PALEO diet (also called the "Caveman Diet") is basically a grain-free diet. You should also cut out all legumes. Some people choose to go dairy-free, too - but mine isn't going to be that extreme ;) I'll limit my dairy intake - but the most important things is to remove anything containing LECTINS (anti-nutrients that can even deplete our Vitamin D stores!)
I will start posting some Paleo Recipes starting this week! I've already been introduced to Paleo Waffles and Miracle Noodles, and they are great substitutions for grains. Check out Paleomg.com for some great recipe ideas, along with The Petite Athleat and Just Eat Real Food Facebook page. These are my favorites so far. If you know of any other good Paleo Recipes or sites - send them my way!

Hooray, you and I are on the exact same wavelength... I have recently found it too depleting to be a celiac vegetarian, and just yesterday I wrote up a whole new kind of grocery list.
Now I have grass-fed beef & lamb in the fridge– what a change! Can't wait to finish healing my gut <3
