Tonight I went to my parents house for dinner, and my mom surprised me with these! She used the XO Baking Company All-Purpose Flour (which is gluten and grain free).
I hope you enjoy these as much as I did!
Gluten-Free Paleo BANANA MUFFINS
6 tablespoons butter, softened
1/2 cup to 2/3 cup granulated white sugar
one small egg
2 ripe bananas
1 scant cup XO Baking Co. All Purpose Flour
1/2 teaspoon baking soda
1/4 teaspoon pink salt plus a pinch or two more
2 tablespoons freshly squeezed lime juice
Beat all of the above ingredients very well. Taste the batter and if it is not flavorful enough, add more salt or a little more lime juice and maybe even a little more banana. Blend thoroughly once again. Generously butter a muffin pan with real butter. Spoon batter in until about half full. This recipe will make seven or eight muffins. Bake at 350 to 375 degrees for approximately 15 minutes or until golden brown. A fork pushed into the muffin should come out clean.
Serve with plenty of butter!!

These look yummy and like they have a great texture. Never heard of that brand of flour, nor have I worked with coconut flour, but I will most definitely have to try these :)
Yeah Bella you should try it! It's really great stuff. Now that I've gone grain-free, I am SO thankful the XO Brand has these mixes! :)
