Gluten-Free Almond Flour Cookies (healthier version)

Here's a healthier version of my Almond Flour Chocolate Chip Cookies - I substituted Organic Palm Sugar (which is low-glycemic and high in nutrients) and used Grass-Fed Butter (which is a GREAT source of beta carotene). Hope you like them!

Gluten-Free Healthy Almond Flour Chocolate Chip Cookies

3 cups Almond Flour
1/2 cup melted, grass-fed butter
1/2 cup + 3 tablespoons cup Organic Palm Sugar 
2 Omega-3 eggs
1/2 teaspoon Celtic Sea Salt
1/2 teaspoon baking soda 
1/2 cup Enjoy Life brand chocolate chips
1/4 cup raisins (optional)

*Grease a cookie sheet with palm shortening
* Make sure to "smash" cookies down since Almond Flour doesn't "spread"
* Bake at 350 for 12-14 minutes

These taste great right out of the oven, but my favorite way to eat them is after they've been in the freezer or fridge over night.
