"Chipotle-style" Gluten-Free Burrito

Do you get cravings for Mexican food like I do? If so - try this burrito! It's so easy to make and takes just about 15 minutes. You'll have a delicious homemade Chipotle-style burrito in no time ;)



Ingredients:
1 Brown Rice Tortilla 
1/4 green pepper
1/4 red pepper
1/4 red onion
1/2 c. shredded goat cheese
1/4 c. white rice (prepared)
1/2 c. black beans
3 tablespoons olive oil


Directions: Cook rice and then add black beans. Simmer. Place tortilla on a large skillet covered with olive oil. Fry onions and peppers in a small skillet with olive oil, and season with onion powder, sea salt, and black pepper. Once tortilla is hot on both sides add the cheese and melt. Then add the rest of the ingredients onto the tortilla. Fold and enjoy!

I use the food for life brown rice tortilla. would love to make my own though! looking for a good recipe :)

The food for life tortillas are good. They taste a little stale but not bad.

I have made the quinoa tortilla recipe from freeeats.com. They were fabulous. Bought a tortilla press on amazon for $18. Check it out, you'll be glad you did!!
