If you miss being able to hop in the car, drive to the nearest Panda Express and get some Chinese takeout, trust me....I feel your pain! Now that we're gluten-free, it's not that simple. However - it can be very close to it, and the good news is it's much, MUCH HEALTHIER to make it ourselves anyway!
Here's how you can create your own Chinese "fast food" in about ten minutes....just in time to sit on the couch, put your feet up, and relax to your favorite TV show...
Ten-Minute Gluten-Free Chinese Cuisine
Ingredients: 1/2 cup enriched white rice
1/4 diced red onion
Sliced bell peppers - green, yellow, orange, and/or red
Coconut Aminos - (aka soy-free / gluten-free "soy sauce")
Directions: Cook rice as directed. Sautee the onions and peppers. Place over steamy hot rice and top with Coconut Aminos and sea salt to taste.
Wah-La! This is one of my favorite "fast food" recipes. So good for you and so easy to make! If you have more time, you can also add chicken or scrambled eggs. Feel free to use different veggies or whatever you like. I have a bell-pepper addiction so I put them on just about everything ;)
